Ingredients
For the Seared Beef & Seasoning Rub:
- 2.5 to 3 lbs 100% grass-fed flank steak or boneless chuck roast, cut into 3 large pieces
- 2 tbsp grass-fed beef tallow or unrefined avocado oil (for searing)
- 1.5 tbsp ground cumin
- 1 tbsp smoked Spanish paprika
- 1 tbsp dried Mexican oregano
- 1.5 tsp garlic powder and 1 tsp onion powder
- 2 tsp coarse Celtic sea salt and 1 tsp black pepper
For the Cuban Sofrito & Braising Sauce:
- 2 large bell peppers (1 red, 1 green), seeded and sliced into thin strips

Step-by-Step Instructions
- Season & Hard Sear the Beef (Chef Maillard Secret): Pat beef chunks completely dry.
