  • 2.5 cups fresh Tuscan Lacinato kale, stems removed and chopped into ribbons
  • 1 tsp coarse Celtic sea salt and 0.5 tsp cracked black pepper

For the Poached Eggs & Toppings:

  • 4 to 6 large pasture-raised eggs
  • 1 ripe Haas avocado, diced or sliced
  • 0.33 cup fresh cilantro and Italian parsley, roughly chopped
  • 1 tbsp extra virgin olive oil or chili oil (for drizzling)

For Serving:

  • Warm grain-free cassava tortillas or almond flour biscuits

Step-by-Step Instructions

  1. Brown the Sausage: Heat 2 tbsp grass-fed ghee in a large 12-inch heavy cast-iron skillet over MEDIUM-HIGH heat. Add ground Italian sausage, breaking it into bite-sized crumbles with a wooden spoon. Cook for 5 minutes until browned.
  2. Sauté Peppers & Aromatics: Add diced red bell pepper and diced onion to the skillet with the sausage. Sauté for 4 to 5 minutes until vegetables are soft and caramelized around the edges. Add minced garlic, tomato paste, ground cumin, smoked paprika, coriander, and chili flakes; cook for 60 seconds until intensely aromatic.
  3. Simmer Fire-Roasted Tomato Sauce: Pour in the fire-roasted crushed tomatoes, sea salt, and black pepper. Stir well, scraping any browned bits from the pan bottom. Reduce heat to MEDIUM-LOW and simmer for 5 minutes until the sauce thickens and deepens in color.
  4. Wilt Tuscan Kale: Stir the chopped Tuscan kale into the bubbling sauce. Simmer for 2 minutes until the kale wilts down into the rich tomato sauce.
  5. Create Wells & Crack Eggs (The Poaching Technique): Use the back of a large spoon to create 4 to 6 small indentations/wells in the simmering sauce. Crack 1 egg directly into each well.
  6. Poach to Runny Yolk Perfection: Cover the skillet tightly with a lid (or foil) and cook over LOW heat for 5 to 7 minutes (or transfer to a 375°F oven), until the egg whites are completely opaque and firm, but the golden yolks remain soft, warm, and runny when nudged.
  7. Garnish & Serve: Remove skillet from heat. Immediately top with diced avocado, fresh chopped cilantro, parsley, flaky sea salt, cracked black pepper, and a drizzle of extra virgin olive oil. Serve hot straight from the cast-iron skillet with warm grain-free cassava tortillas!
