Ingredients

For the Crispy Avocado Fries:

  • 3 large Hass avocados, ripe but firm to the touch, sliced into 0.5-inch thick wedges
  • 1 cup superfine blanched almond flour (or crushed pork rinds for extreme crunch)
  • 0.25 cup arrowroot starch or tapioca flour
  • 2 large pasture-raised eggs, lightly beaten
  • 1.5 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked Spanish paprika
  • 1 tsp coarse Celtic sea salt
  • 0.25 tsp freshly ground black pepper
  • Avocado oil spray (for misting fries)

For the Smoky Chipotle Lime Aioli:

  • 0.5 cup avocado oil mayonnaise (such as Primal Kitchen)
  • 1 tbsp fresh organic lime juice
  • 1 tsp ground chipotle chili powder (or 1 tbsp clean chipotle in adobo)
  • 1 clove garlic, finely grated
  • 0.5 tsp smoked paprika
  • 0.5 tsp coarse sea salt
  • Lime wedges & fresh cilantro (for garnish)

Step-by-Step Instructions

  1. Make Smoky Chipotle Aioli: In a small bowl, whisk together the avocado oil mayonnaise, fresh lime juice, chipotle powder, grated garlic, smoked paprika, and sea salt until smooth and creamy. Chill in the refrigerator while making the fries.
  2. Slice the Avocados (Chef Secret): Cut avocados in half lengthwise and remove the pit. Peel the skin gently and slice each half lengthwise into 4 to 5 sturdy, 0.5-inch thick wedges. (Using firm avocados ensures the fries hold their structure during breading and cooking).
  3. Set Up Breading Station: In shallow bowl #1, whisk the 2 eggs. In shallow bowl #2, whisk together the almond flour, arrowroot starch, garlic powder, onion powder, smoked paprika, coarse sea salt, and black pepper.
  4. Dredge & Coat: Working with one avocado wedge at a time, dip into the beaten egg with your left hand, letting excess drip off. Place into the almond flour mixture and use your right hand to press the breading firmly onto all sides until thoroughly coated. Transfer to a clean plate.
  5. Preheat & Load Air Fryer: Preheat air fryer to 400°F (200°C) for 3 minutes. Lightly mist the air fryer basket with avocado oil spray. Arrange avocado wedges in a single layer with space between each piece. Spray the tops of the fries generously with avocado oil spray (ensures a deep golden crunch).
  6. Air Fry to Golden Crunch: Air fry at 400°F for 7 to 8 minutes, gently flipping at the 4-minute mark and misting again with avocado oil spray, until the crust is deeply golden-brown and crispy.
  7. Plate & Serve: Carefully transfer hot avocado fries to a serving platter. Sprinkle with a pinch of flaky sea salt and garnish with fresh cilantro and lime wedges. Serve immediately with chilled smoky chipotle aioli!

Frequently Asked Questions

How do I pick the right avocados for fries?

Choose avocados that yield only slightly to gentle pressure at the stem end. Avoid soft or overripe avocados, as they will collapse when dredged in the egg and almond flour.

Can I bake these in the oven?

Yes! Place breaded fries on a parchment-lined baking sheet, spray generously with avocado oil, and bake at 425°F (220°C) for 12 to 15 minutes until golden and crisp.
