Ingredients

For the Crispy Chicken & Bacon:

  • 2 lbs pasture-raised bone-in, skin-on chicken thighs (approx. 4 to 5 large thighs)
  • 4 slices pasture-raised thick-cut bacon, chopped into lardons (drippings reserved)
  • 1 tsp garlic powder and 1 tsp smoked Spanish paprika
  • 1.5 tsp coarse Celtic sea salt
  • 0.5 tsp freshly ground black pepper

For the Tangy Honey Dijon Reduction:

  • 0.33 cup organic coarse stone-ground Dijon mustard
  • 3 tbsp raw unfiltered wildflower honey (or date syrup)
  • 0.5 cup rich organic chicken bone broth
  • 1 tbsp raw apple cider vinegar
  • 5 cloves garlic, finely minced
  • 1.5 tbsp fresh rosemary leaves, finely chopped
  • 1 tsp fresh thyme leaves
  • 1 tbsp grass-fed ghee or culinary coconut cream (for velvety finish)

For Garnish:

  • Fresh rosemary sprigs & chopped flat-leaf parsley
  • Steamed green beans or roasted garlic sweet potato mash (for serving)

Step-by-Step Instructions

  1. Dry & Season Chicken: Pat chicken thighs thoroughly dry with paper towels (especially the skin). Season all sides with garlic powder, smoked paprika, coarse sea salt, and black pepper.
  2. Crisp the Bacon: Heat a large 12-inch cast-iron skillet over MEDIUM heat. Add the chopped bacon and cook for 5 to 6 minutes until crispy and golden. Transfer crispy bacon lardons to a paper towel-lined plate, leaving the rendered fat in the skillet.
  3. Sear for Ultra-Crispy Skin (Chef Secret): Place chicken thighs skin-side DOWN in the hot bacon drippings. Cook undisturbed over MEDIUM heat for 8 to 10 minutes without moving them, allowing the skin fat to render out and form a deeply browned, crackling crust. Flip thighs and cook for 4 minutes on the second side. Transfer chicken to a warm plate.
  4. Sauté Garlic & Herbs: Pour off excess bacon fat from the skillet, leaving 1.5 tbsp behind. Add minced garlic, chopped fresh rosemary, and thyme; sauté for 45 seconds until fragrant.
  5. Simmer Honey Mustard Sauce: Pour in the chicken bone broth, stone-ground Dijon mustard, raw honey, and apple cider vinegar. Using a wooden spoon, scrape up all the flavorful browned chicken fond from the pan bottom. Simmer vigorously for 3 minutes until the sauce reduces and thickens slightly. Whisk in 1 tbsp ghee (or coconut cream) to create a glossy emulsion.
  6. Recombine & Simmer: Nestled the seared chicken thighs skin-side UP back into the bubbling sauce (keep the crispy skin above the sauce line so it stays crunch). Simmer gently for 4 to 5 minutes until chicken registers 165°F (74°C) internally.
  7. Garnish & Serve: Remove from heat. Scatter crispy bacon lardons, fresh rosemary sprigs, and chopped parsley over top. Spoon the rich honey mustard reduction onto plates alongside roasted sweet potatoes or steamed green beans!

Frequently Asked Questions

Can I use boneless skinless chicken breasts?

Yes! Sear chicken breasts in 2 tbsp avocado oil for 5 minutes per side until golden, then simmer in the honey mustard reduction for 3 minutes.

How do I keep the chicken skin extra crispy?

Pat the skin dry before searing, cook skin-side down over medium heat without moving, and keep the skin above the liquid line when returning thighs to the simmering sauce.
