Ingredients

For the Crispy Chicken Cutlets:

  • 1.75 lbs pasture-raised boneless, skinless chicken breasts (cut in half horizontally and pounded to 0.25-inch thickness into 4 thin cutlets)
  • 0.5 cup superfine blanched almond flour
  • 0.25 cup arrowroot starch or tapioca flour
  • 1 tsp garlic powder and 1 tsp onion powder
  • 1.5 tsp coarse Celtic sea salt
  • 0.5 tsp freshly ground black pepper
  • 3 tbsp unrefined avocado oil (for searing)

For the Silky Lemon Caper Ghee Pan Sauce:

  • 3 tbsp grass-fed clarified butter (ghee) (divided)
  • 3 tbsp brined non-pareil capers, drained and patted dry
  • 0.5 cup rich organic chicken bone broth
  • 0.33 cup fresh organic lemon juice (approx. 2 large lemons)
  • 1 tsp finely grated lemon zest
  • 4 cloves garlic, finely minced
  • 1 organic lemon, sliced into thin wheels (for searing)
  • 0.33 cup fresh Italian flat-leaf parsley, finely chopped

For Serving:

  • Steamed garlic asparagus, roasted cauliflower mash, or zucchini noodles

Step-by-Step Instructions

  1. Pound Cutlets (Even Cooking Invariant): Place halved chicken breasts between two sheets of parchment paper. Using a meat mallet or heavy rolling pin, pound gently to an even 0.25-inch thickness. Season both sides lightly with 0.5 tsp coarse sea salt and black pepper.
  2. Dredge in Grain-Free Breading: In a wide shallow dish, whisk together the almond flour, arrowroot starch, garlic powder, onion powder, remaining 1 tsp sea salt, and black pepper. Dredge each cutlet in the mixture, pressing gently to coat and shaking off excess.
  3. Crisp the Capers & Lemon Slices (Chef Secret): Heat 1 tbsp avocado oil and 1 tbsp ghee in a large 12-inch heavy skillet over MEDIUM-HIGH heat. Add the capers and lemon slices. Fry for 90 seconds until the capers are crisp and burst and the lemon slices caramelize on the edges. Remove capers and lemon slices with a slotted spoon to a small plate.
  4. Sear Chicken to Golden Crust: Add the remaining 2 tbsp avocado oil to the hot skillet. Add chicken cutlets in a single layer (cook in 2 batches if needed). Sear undisturbed for 3 to 4 minutes on the first side until deep golden and crunchy. Flip and sear for 2 to 3 minutes on the second side until cooked through (165°F internal). Transfer chicken to a warm serving platter.
  5. Deglaze & Reduce Lemon Garlic Sauce: Lower heat to medium. Add minced garlic to the pan drippings; sauté for 30 seconds until fragrant. Pour in the chicken bone broth, fresh lemon juice, and lemon zest. Using a wooden spoon, scrape up all the delicious caramelized browned bits from the pan bottom. Simmer vigorously for 3 minutes until the liquid reduces by half.
  6. Emulsify with Cold Ghee: Remove skillet from heat. Whisk in the remaining 2 tbsp cold grass-fed ghee. Swirl vigorously until the ghee melts and creates a glossy, velvety emulsion that coats the spoon. Stir in the crispy fried capers and chopped parsley.
  7. Plate & Serve: Spoon the warm lemon-caper ghee sauce generously over the crispy chicken cutlets. Crown with the caramelized lemon wheels and fresh parsley. Serve immediately over cauliflower mash or zucchini noodles!

Chef's Paleo Nutritional Science

Non-pareil capers are among the richest dietary sources of quercetin and kaempferol bioflavonoids, which potently inhibit oxidative mast cell degranulation and lipid peroxidation. Fresh lemon juice delivers active citric acid that enhances gastric hydrochloric acid secretion, accelerating complete protein peptide cleavage in the upper duodenum.

Frequently Asked Questions

Can I make this with chicken thighs or pork chops?

Yes! Boneless skinless chicken thighs or thinly pounded pork loin cutlets (pork piccata) work identically well with the same crispy breading and lemon sauce.

Why fry the capers first?

Frying brined capers in hot fat dehydrates their outer petals, transforming them into crunchy, nutty flavor pearls that elevate the dish above soggy boiled capers.
