Ingredients

For the Pepper Vessels:

  • 4 large organic bell peppers (red, yellow, or orange, halved lengthwise, stems and seeds removed)
  • 1 tbsp extra virgin olive oil (for brushing peppers)
  • 0.5 tsp coarse sea salt

For the Italian Turkey & Cauliflower Rice Filling:

  • 1.25 lbs lean ground turkey (93/7) or grass-fed ground beef / Italian pork sausage
  • 2.5 cups fresh riced cauliflower
  • 1 medium yellow onion, finely diced
  • 5 cloves garlic, minced
  • 1 can (14.5 oz) organic crushed San Marzano tomatoes (or clean sugar-free marinara)
  • 2 tbsp organic tomato paste
  • 1 tbsp dried Italian herb seasoning (blend of oregano, basil, rosemary, thyme)
  • 0.5 tsp crushed red pepper flakes (optional, for subtle heat)
  • 1.5 tsp coarse Celtic sea salt
  • 0.5 tsp freshly ground black pepper
  • 0.33 cup fresh basil leaves, chopped (for garnish)
  • 2 tbsp nutritional yeast or dairy-free parmesan (optional, for cheesy dusting)

Step-by-Step Instructions

  1. Preheat & Pre-Roast Peppers (Chef Secret): Preheat oven to 400°F (200°C). Arrange halved bell peppers cut-side up in a 9x13-inch glass baking dish. Brush lightly with 1 tbsp olive oil and season with sea salt. Pour 2 tbsp water into the bottom of the dish. Pre-roast for 10 minutes to tenderize the peppers before stuffing (prevents crunchy undercooked peppers).
  2. Brown the Ground Turkey: While peppers pre-roast, heat 1 tbsp olive oil in a large skillet over medium-high heat. Add ground turkey and diced onion, breaking the turkey into small crumbles with a spatula. Cook for 5 to 6 minutes until the turkey is browned and onions are translucent.
  3. Sauté Garlic & Cauliflower Rice: Add minced garlic and fresh riced cauliflower to the skillet. Cook for 3 minutes, stirring constantly until the cauliflower absorbs the savory juices.
  4. Simmer Italian Tomato Sauce: Stir in tomato paste, crushed San Marzano tomatoes, dried Italian seasoning, red pepper flakes, sea salt, and black pepper. Lower heat to medium-low and simmer for 4 minutes until the sauce thickens and coats the meat and rice.
  5. Stuff the Peppers: Remove the pre-roasted peppers from the oven. Spoon the savory turkey-cauliflower mixture generously into each pepper cavity, heaping it slightly over the top.
  6. Bake to Bubbly Perfection: Return the baking dish to the oven at 400°F and bake uncovered for 18 to 20 minutes until the filling is piping hot and the edges of the peppers are blistered and tender.
  7. Garnish & Serve: Remove from oven and let rest for 5 minutes. Sprinkle with fresh chopped basil and a dusting of nutritional yeast (or dairy-free parmesan). Serve warm!

Chef's Paleo Nutritional Science

Sweet bell peppers provide over 200% of the recommended daily value of ascorbic acid (Vitamin C) alongside capsanthin carotenoids that attenuate cellular oxidative stress. Combining lean ground turkey with cruciferous riced cauliflower provides comprehensive amino acid satiety without the glycemic surge or lectin-associated gut irritation of grain-based white rice.
