Ingredients

  • 1.5 lbs 100% grass-fed ground beef
  • 0.5 cup organic coconut aminos
  • 1.5 tbsp toasted sesame oil and 1 tbsp pure maple syrup or raw honey
  • 5 cloves fresh garlic, minced, and 1.5 tbsp fresh ginger, grated
  • 1 tsp red pepper chili flakes
  • 4 green scallions, sliced
  • Steamed cauliflower rice, cucumber ribbons, and sesame seeds (for serving)

Step-by-Step Instructions

  1. Step 1: In a measuring cup, whisk coconut aminos, sesame oil, maple syrup/honey, minced garlic, grated ginger, and red pepper flakes.
  2. Step 2: Heat a large skillet over medium-high heat. Add ground beef and cook for 6 to 8 minutes, breaking into crumbles, until browned. Drain excess liquid.
  3. Step 3: Pour bulgogi sauce over the hot beef; simmer for 3 to 4 minutes until the sauce reduces and glazes every crumble of meat.
  4. Step 4: Stir in sliced scallions and remove from heat.
  5. Step 5: Divide cauliflower rice into bowls. Top with glazed bulgogi beef, cucumber ribbons, toasted sesame seeds, and clean kimchi.
