Ingredients

For the Caramelized Sea Scallops:

  • 1.25 lbs wild-caught dry sea scallops (approx. 12 to 16 jumbo U-10 or U-12 scallops, side muscle/abductor removed)
  • 3 tbsp grass-fed clarified butter (ghee) (divided)
  • 1 tbsp unrefined avocado oil (ensures high smoke point)
  • 4 cloves garlic, smashed
  • 3 sprigs fresh thyme and 1 sprig fresh rosemary
  • 2 tbsp fresh organic lemon juice and 1 tsp lemon zest
  • 1 tsp coarse Celtic sea salt and 0.5 tsp freshly cracked black pepper

For the Velvety Garlic Cauliflower Puree:

  • 1 large head organic cauliflower, cut into florets (approx. 5 cups, steamed until tender)
  • 2 tbsp grass-fed ghee or culinary coconut cream
  • 3 cloves roasted or sautéed garlic
  • 1 tsp coarse sea salt and 0.25 tsp white pepper

For Garnish:

  • 2 tbsp fresh Italian flat-leaf parsley & chives, finely chopped
  • Lemon wedges & pinch of flaky sea salt

Step-by-Step Instructions

  1. Make Velvety Cauliflower Puree: Steam cauliflower florets for 10 minutes until fork-tender. Transfer immediately to a food processor with 2 tbsp ghee (or coconut cream), garlic, sea salt, and white pepper. Puree for 90 seconds until silky, luxurious, and completely smooth like mashed potatoes. Keep warm.
  2. Remove Side Muscle & Dry (Chef Rule #1): Remove the small tough side muscle from each scallop if attached. Place scallops between several layers of paper towels and press gently. Let sit for 5 minutes. (Moisture is the enemy of a golden crust; scallops must be bone-dry).
  3. Season Scallops: Just before searing, season the top and bottom of the dry scallops with coarse Celtic sea salt and cracked black pepper. (Never salt early, as salt draws out moisture).
  4. Smoking Cast-Iron Sear: Heat 1 tbsp avocado oil and 1 tbsp ghee in a heavy 12-inch cast-iron skillet over HIGH heat until smoking hot. Using tongs, place scallops in the pan clockwise, leaving 1 inch of space between each (cook in 2 batches if needed).
  5. Sear Undisturbed (90-Second Rule): Sear undisturbed for 90 to 100 seconds without touching or shaking the skillet until a deep golden-brown caramelized crust forms on the bottom.
  6. Flip & Baste with Garlic Herb Ghee: Flip each scallop. Immediately add the remaining 2 tbsp ghee, smashed garlic cloves, fresh thyme sprigs, and rosemary to the skillet. Tilt the skillet slightly and use a large spoon to continuously baste the melted foaming herb ghee over the tops of the scallops for 60 to 75 seconds until the sides are opaque and center is just warm. Remove from heat immediately.
  7. Finish with Lemon: Squeeze fresh lemon juice over the bubbling pan juices and swirl to emulsify.
  8. Plate & Serve: Spoon a generous pillow of velvety garlic cauliflower puree onto warm shallow plates. Arrange 3 to 4 seared scallops on top. Drizzle the foaming lemon-thyme ghee over the scallops. Garnish with chopped parsley, chives, and flaky sea salt. Serve immediately!
