  • 8 cloves garlic, smashed
  • 0.33 cup organic tomato paste
  • 2.5 cups rich organic beef bone broth
  • 3 tbsp organic coconut aminos
  • 2 tbsp raw unfiltered apple cider vinegar or red wine vinegar
  • 3 sprigs fresh rosemary and 4 sprigs fresh thyme
  • 2 dried bay leaves

For Garnish:

  • Fresh rosemary sprigs & chopped Italian parsley

Step-by-Step Instructions

  1. Season the Brisket: In a small bowl, mix smoked paprika, garlic powder, onion powder, dried oregano, coarse sea salt, and black pepper. Rub the seasoning paste firmly into all sides and crevices of the beef brisket.
  2. Hard Cast-Iron Sear (Maillard Flavor Invariant): Heat 2 tbsp beef tallow (or ghee) in a large 6-quart to 8-quart enameled cast-iron Dutch oven over MEDIUM-HIGH heat. Sear the brisket fat-cap side DOWN first for 5 to 6 minutes until a deep, dark caramelized crust forms. Flip and sear the other side for 4 minutes. Transfer seared brisket to a large platter.
  3. Caramelize the Onions: Reduce heat to MEDIUM. Add sliced yellow onions to the hot rendered beef drippings. Cook for 8 to 10 minutes, stirring occasionally, until deeply golden-brown and sweet.   5. Assemble & Slow Braise: Scatter carrots and celery into the pot. Nestle the seared brisket fat-side UP directly on top of the bed of caramelized onions and vegetables. Tuck fresh rosemary sprigs, thyme sprigs, and bay leaves into the liquid around the beef. (Liquid should reach roughly halfway up the sides of the brisket).
  6. Bake to Melting Tenderness: Cover tightly with the heavy Dutch oven lid (or double layer of foil). Transfer to a preheated 300°F (150°C) oven. Braise undisturbed for 3 to 3.5 hours (or slow cook on LOW for 8 hours) until the brisket is fork-tender and yields with zero resistance.
