  • 2 medium sweet potatoes, peeled and diced
  • 1 large onion and 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 can (28 oz) fire-roasted crushed tomatoes
  • 1 cup rich beef bone broth
  • 2.5 tbsp chili powder, 1 tbsp cumin, 1 tsp smoked paprika, 1.5 tsp sea salt

Step-by-Step Instructions

  1. Step 1: Season short ribs with sea salt and black pepper; sear in a hot skillet for 6 minutes until browned.
  2. Step 2: Place diced sweet potatoes, onion, bell pepper, and garlic into slow cooker.
  3. Step 3: Add crushed tomatoes, beef bone broth, chili powder, cumin, and smoked paprika; stir well.
  4. Step 4: Nestle seared short ribs down into the chili mixture.
  5. Step 5: Cover and cook on LOW for 8 hours until short rib meat falls completely away from bones.
  6. Step 6: Discard bones and shred short rib meat into chili. Ladle into bowls and top with avocado slices and green onions.
