Ingredients

For the Roasted Asparagus & Leek Base:

  • 2 lbs fresh organic asparagus spears, woody ends snapped off, cut into 2-inch pieces (reserve 8 whole tips for garnish)
  • 2 large leeks (white and pale green parts only), washed thoroughly and thinly sliced
  • 6 cloves fresh garlic, peeled and whole (for roasting)
  • 3 tbsp unrefined avocado oil or melted grass-fed ghee
  • 4 cups rich organic chicken or vegetable bone broth
  • 0.75 cup full-fat culinary coconut cream (unsweetened)
  • 2 tbsp fresh organic lemon juice and 0.5 tsp lemon zest
  • 1.5 tsp coarse Celtic sea salt and 0.5 tsp white pepper

For the Crispy Prosciutto & Garnishes:

  • 4 to 6 slices sugar-free uncured prosciutto or pancetta (Whole30-compliant)
  • 2 tbsp fresh chives or tarragon, finely minced
  • Extra virgin olive oil & freshly cracked black pepper (for finishing drizzle)

Step-by-Step Instructions

  1. Roast Asparagus & Crisp Prosciutto: Preheat oven to 425°F (220°C). Line two large baking sheets with parchment paper. On the first sheet, arrange asparagus pieces, reserved tips, and whole garlic cloves; toss with 2 tbsp avocado oil, 0.5 tsp sea salt, and white pepper. On the second sheet, lay out prosciutto slices flat. Bake both for 10 to 12 minutes—prosciutto will become shatteringly crisp and asparagus will be tender with caramelized tips. Remove prosciutto to paper towels and let cool.
  2. Sauté Leeks: Heat 1 tbsp avocado oil or ghee in a large Dutch oven or soup pot over MEDIUM heat. Add sliced leeks and 0.5 tsp sea salt; sauté for 5 to 6 minutes until soft, sweet, and translucent (do not brown).
  3. Simmer with Bone Broth: Add the roasted asparagus (reserving the 8 tips for garnish), roasted garlic cloves, and chicken bone broth to the pot. Bring to a gentle boil, then simmer on MEDIUM-LOW for 5 minutes to let flavors meld.
  4. High-Speed Velvet Puree (Texture Invariant): Remove pot from heat. Using an immersion blender (or transferring in batches to a high-speed blender), blend soup on HIGH for 90 seconds until completely smooth, silky, and vibrant emerald green.
  5. Stir in Coconut Cream & Lemon: Return pot to LOW heat. Stir in full-fat coconut cream, fresh lemon juice, lemon zest, and remaining sea salt. Whisk gently for 2 minutes until hot and velvety.
  6. Ladle, Crown & Serve: Ladle steaming soup into wide shallow bowls. Swirl a few drops of extra virgin olive oil over the surface. Crown each bowl with 2 roasted asparagus tips, crushed crispy prosciutto shards, fresh snipped chives, and cracked black pepper. Serve immediately!
